This is a lovely combination - it has a Mediterranean feel to it with the stuffed aubergines and the chicken with its tomato-y, slightly spiced, sauce. You need to have an hour to prepare and cook the aubergines, but otherwise this menu works well at the weekend or during the week - as a family meal, or with friends.
Serve with Brown Rice and a Green Salad.
Another idea try this menu with some sliced mushrooms, sauteed in a little butter.
