Ingredients:
450g green beans trimmed
2 tablespoons olive oil
2 cloves garlic crushed
1 lemon halved, plus more for slicing (optional)
Salt and freshly ground black pepper
Flaked almonds, toasted (optional)
Serves 4
Instructions:
Preheat oven to 180C (160C Fan)/Gas Mark 4.
On a baking sheet, toss the green beans with olive oil and crushed garlic. Squeeze lemon halves over the beans. Slice lemon halves and add to baking sheet.
Roast until browned and almost tender, stirring occasionally, about 10 minutes. Season to taste with salt and pepper. Serve.
Whilst the beans are baking, lightly toast the flaked almonds on another baking sheet (just takes a couple of minutes). Sprinkle over the green beans before serving.
