Here’s our fruity mincemeat recipe for a great sweet treat at Christmas - it doesn’t contain any suet or other fat and takes just 5 minutes to make. You can keep it in jars in the fridge for a few weeks.
You can make your own pastry, or just buy the vegetarian/vegan friendly ready-made pastry (e.g. Jus Roll - see Tips) available in the supermarket.
Ingredients:
900g apples
900g raisins
900g currants
rind and juice of 3-4 lemons
900g sugar (ensure vegan friendly)
2 tbsp brandy
This recipe will make enough mincemeat for about 60 mince pies. Obviously, you can halve the quantity but it keeps well in jars in the fridge ready for a second or third batch. If you intend to store it, then you should sterilise some jars by placing them a preheated oven at 120 degrees for 15 minutes before using.
To make the mincemeat:
Peel and core the apples. Place them in a blender with the other ingredients. Blitz briefing so they are all roughly chopped but not pureed. Spoon into the sterilised jars – or just use it all at once!
