6 skinless chicken breasts
2 sprigs of fresh rosemary, leaves only
3 large cloves of garlic
2 tablespoon olive oil
2 tablespoons of white wine vinegar
generous pinch of cayenne pepper
2-3 red onions, peeled and cut into wedges
6-10 Wooden BBQ skewers, soaked in water
Using just the rosemary leaves, smash them up in a pestle and mortar with a pinch of sea salt. Peel and crush in the garlic, then muddle in 2 tablespoons of olive oil, the vinegar and a generous pinch of cayenne.
Chop the chicken into 2cm chunks and put the chicken into a bowl. Mix well with the marinade until evenly coated.
Skewer up the chicken chunks, randomly interspersing them with the red onion chunks.
Grill on the BBQ until cooked through. Serve immediately.
