Cook the cous cous according to packet instructions - usually for 4 people, I would use 500g dried cous cous, and 18 fl oz of boiling water. You will also need a tablespoon of olive oil, about 1-2 oz of butter and some salt to season it to taste.
To prepare, put the cous cous in a heat proof mixing dish. Pour the boiling water over the cous cous, and add a generous knob of butter and a tablespoon of olive oil. Mix well together. Cover the dish with a serving plate or lid, and leave to stand and absorb the liquid.
After about 10 minutes, uncover, and use a fork to break up any lumps. Season with salt to taste. Stir and serve with the vegetable and chicken dishes.
