Classic Tomato Salsa (Ve)

Serves 4-6 people

3-4 ordinary vine ripened tomatoes, chopped roughly

1 fresh green chilli, seeds removed, chopped finely

2 teaspoons finely chopped onion

Juice of one lime

Salt and freshly ground pepper

1 pinch of ground cumin

2 tablespoons chopped fresh coriander

Mix all the ingredients together. Leave to marinate for an hour. Serve with flat breads or tortilla chips.
