Baked Pollock with Tomato Sauce


4 Pollock fillets

1 pint (approx. 570ml) of homemade tomato sauce (see Tomato Sauce recipe)

Handful of black olives

Fresh basil leaves to serve

Heat the oven to 180C (160C Fan), Gas Mark 4.


Oil a baking dish and place the fish fillets on it.  Pour over half of the tomato sauce and the olives.

Place in the oven for 20 minutes approximately until cooked through.

Heat the remaining tomato sauce to serve on the side.

Sprinkle with basil leaves and serve.
