Simple and easy enough to prepare mid-week but different enough to serve friends at the weekend. Tempting, nutritious and tasty.

Fish (or chicken breasts) wrapped in parma ham

Potatoes baked with creamy green lentils (vegan)

Aubergine stacks (vegan)

Green salad

You can swap the fish for chicken if you prefer. In terms of fish, this works well with any white fish or salmon.
