Aubergine Appetisers (Ve)

A great idea to impress those following a plant-based lifestyle at a party (but likely to attract the eye of everyone else too!)....



Ingredients:


2 aubergines

3 tablespoons of flavoured olive oil, such as chilli or basil

salt and freshly ground black pepper

1 quantity humus (bought or homemade) OR Vegan Pesto (Sacla or Meridian both do vegan pesto ready made)

1 tablespoon of fresh coriander leaves


Instructions:


Preheat the grill to high.


Trim the stalks from the aubergines and slice each lengthways into about 6 slices (1cm/1/4 inch thick). Brush liberally with oil and grill until golden. Turn, brush again with oil, season with salt and pepper and grill until golden and tender.


(Alternatively, if you aren't confident with the grill, you can roast the aubergine slices. Roast each side for about 5-8 minutes, at 200C, Gas Mark 6.)


Spread the aubergine slices with the hummus (or vegan pesto if using instead). Roll up and secure with the cocktail sticks. Arrange on a colourful plate and scatter with coriander leaves.
